Cheese and Beef Log Recipe

* 2 cups shredded sharp Cheddar cheese, room temperature
* 3 ounces cream cheese with chives, room temperature
* 1/4 cup dry white wine
* 1 teaspoon prepared horseradish
* 1/2 cup chopped dried beef
Preparation:
In mixing bowl combine Cheddar and cream cheese, wine, and horseradish. Beat with a hand-held electric mixer until well blended.Cover chill for 2 hours.Shape cheese mixture into a log about 1 1/2 to 2 inches in diameter.Roll log in the finely chopped beef.Wrap log in clear plastic wrap refrigerate until serving time.Serve with assorted crackers.Store dried beef cheese log or ball tightly covered in the refrigerator.
